Quindim - Brazilian Egg based desert

Quindim inherits the portuguese habits of making deserts based on eggs. Portugal is a heaven for those kind of deserts, but this one is a traditional brazilian recipe.
Ingredients
- 12 egg yolks
- 2 egg whites
- 12 Tb spoon of sugar
- 1 Tb spoon of butter
- 100 to 120 grams of fresh coconut flakes
How to prepare
- In a bowl, add 12 egg yolks and separate 2 whites in another bowl
- Mix the 12 egg yolks using a fork
- Add the sugar gradually, in 3 or 4 parts mixing into the egg yolks (make use of bain marie to ensure the sugar and o butter will dissolve - If you don't know about it, check the technique here: https://www.thekitchn.com/technique-how-to-make-and-use-70190)
- Add the butter and the whites and keep mixing, until the texture is smooth (you pinch it a won't feel any sugar. If you still feeling sugar grains, keep mixing until it dissolves).
- Lastly add the coconut flakes and mix well.
- Prepare the baking tray spreading a little bit of butter and sparking caster sugar. The idea is to create a thin layer of sugar (Remove the excess of sugar).
- transport the mixing to the tray where you will bake it (usually something like a tube pan. However, a doughnut or muffin pan should also work if you like to make individual units).
How to bake it
- The baking is also on bain-marie. Pre-heat the oven at 150C
- In a large tray or bowl, add boiling water.
- You will need to add the pan with the mixing inside the large tray with water, so the boiling water covers the most of the pan (if you don't know how to do it, check the link above).
- Let to cook in the oven for 45 to 60 minutes.
- Let it cool, find a place (large tray or plate) where you can flip the tray and let the quindim to settle.
